MID/ Mycotoxin Induced Disease
ENTRY PATHWAYS
MYCOTOXINS are NEVER volatile, but CAN BE CARRIED BY PARTICLES (water drops/mist, spores, fragments)
if water damage is NOT REMEDIATED  QUICKLY ENOUGH,
MOLDS develop
THREE routes of ENTRY:
- NOSE
- MOUTH
- SKIN
Mycotoxins can also enter through food. The key culprits are :
All derivatives of corn, wheat, and such, especially bread, but also:
Wine
Cheese
Apples

What about cheese:
- High concentrations of cyclopiazonic acid, alfatrem and aflatoxin can be found in camembert like cheeses (Duran RM, Appl Microbiol Biotech, 2006)
- high concentrations of sterigmatocystin (up to 700 microg/Kg)  in Dutch type cheeses (such as Gouda, Edam, ) : Versilvskis A.; Mol Nutr Food Res. 2010, 54, 136- ; Northolt M.D.; Jour. Ass. Off. Anal. Chem. 1980, 63: 115-
